Father's Day Steaks

For the wood chips:
2 cups of wood chips
500ml water in a bowl
1 x large aluminium tray

For the steak:
1 x small aluminium tray
spinneysFOOD Tenderloin Steak
Olive Oil
spinneysFOOD Sweet & Smokey BBQ Seasoning
spinneysFOOD Salt and Black Pepper
Griddle pan

1 Soak the wood chips for at least 3 hours. 2 Remove chips from the water and place in the bottom of a baking tray. 3 Place an aluminium tray or smaller baking tray on top of the wood chips. 4 Rub the steak with the Sweet & Smokey Seasoning, salt and black pepper. 5 Place the meat in the smaller tray. 6 Cover well with foil, making sure there are no openings for smoke to escape. 7 Place the tray in the oven at 220°C, gas mark 5, for 30-40 minutes. 8 Remove from oven and allow to rest. 9 Reverse sear the steak on a hot griddle pan. 10 Serve with honey fennel root vegetables – recipe below.


Olive oil 
200g small carrots 
200g baby beetroot, quartered 
1 tbsp spinneysFOOD Fennel Seeds 
2 tbsp honey
In a small frying pan add the olive oil and vegetables, fennel seeds and honey and fry for about 10 minutes until vegetables are cooked through. 




1 cup parsley leaves
4 small garlic cloves
2 tbsp crushed chilli flakes
Half a small red onion
1 cup extra-virgin olive oil
Lemon juice
3 tbsp balsamic vinegar
2 tbsp fresh oregano leaves

1 Place the parsley, garlic, chilli flakes, red onion, olive oil, lemon juice and balsamic vinegar in a blender with a mincer attachment. Season with the salt and pepper. 2 Blend until smooth and pour the sauce goes in to a bowl. 3 Oil the steak and season with salt only. 4 Place the steak on a sizzling hot pan and cook for 4-5 minutes. 5 Turn it over and cook for a further 3-5 minutes. 6 Remove from the heat and rest for a few minutes. 7 Place the meat on a plate with fries, season to your liking, slice the meat and spoon over the sauce.

2 tbsp soy sauce
2 tbsp honey
Juice of 1 lemon
2 cloves of garlic, sliced
1 small red onion, roughly chopped

Fresh thyme
spinneysFOOD T-bone Steak

1 Place a T-bone steak in an oven dish and marinade with the oil, soy sauce, honey, lemon juice, garlic, onion, BBQ seasoning and thyme. 2 Refrigerate the meat for at least 3-4 hours or overnight if possible. 3 Remove the T-bone from the marinade, heat a griddle pan until sizzling hot and place the steak in the pan. 4 Cook to your liking – for medium rare fry the steak for 8 minutes, flip it over and fry for another 4 minutes. 5 Serve with a simple salad.
