Breakfast Pizza

A super tasty, filling dish, perfect for a leisurely weekend brunch at home

200g pre-rolled shortcrust pastry 
4 tbsp spinneysFOOD Classic Pizza Sauce 
2 sprigs fresh thyme leaves 
¾ cup grated Emmental plus 4 slices 
500g spinneysFOOD Beef Meatballs
2 spinneysFOOD Free-Range Eggs
1 cup spinneysFOOD Organic Rocket 
spinneysFOOD Coarse Salt and Black Pepper
Olive oil 

1 Preheat the oven to 180℃, gas mark 4. 2 Roll out the shortcrust pastry, spread the pizza sauce over the pastry leaving a rim around the edges, sprinkle the thyme leaves and grated Emmental and spread evenly. 3 Place the meatballs on top of the pizza crust and bake in the oven for about 20 minutes until the crust is golden brown and the meatballs are cooked. 4 Remove the pizza from the oven. 5 In a large frying pan fry the two free-range eggs to your liking. 6 Place the eggs on the pizza and top with the rocket and a few slices of Emmental. 7 Season with salt and pepper and drizzle with olive oil.
