Crostini with avocado, black garlic and tomatoes

Serves: 4 people
Cooking time: 15 minutes

1 baguette
1 garlic clove, halved 
1 medium spinneysFOOD tomato, chopped 
¼ tsp spinneysFOOD black pepper 
⅛ tsp spinneysFOOD sea salt 
1 large, ripe spinneysFOOD organic avocado

1 Preheat broiler to high. 2 Peel and mash the avocado. 3 Cut the baguette into 10 slices. 4 Reserve 2 slices of the bread for dinner. 5 Broil the remaining bread for 30 seconds on each side, until lightly toasted. 6 Rub the bread with the cut sides of the clove of garlic. 7 In a bowl, combine the tomato, pepper and sea salt. 8 Allow the tomato mixture to stand for five minutes. 9 Spread avocado evenly on the toast. 10 Top with the tomato mixture.

Avocado smoothie with green fruits and spinach

Serves: 1 person
Prep time: 5 minutes

½ spinneysFOOD cucumber
½ spinneysFOOD organic avocado
1 spinneysFOOD organic apple
1 pear
1 handful of spinneysFOOD spinach
1 cup of water

1 Wash and slice the fruits and veggies, being sure to remove the seeds from the apple. 2 Put all the fruit and vegetables into the blender. 3 Add the cup of water. 4 Blend the ingredients using your blender’s ‘smoothie’ setting, or use a slow blender setting for the first 10 seconds and then increase to high speed for 15-20 seconds.

Scrambled Eggs with Avocado

Serves: 4 people
Prep time: 5 minutes
Cook time: 5 minutes

1 large spinneysFOOD avocado
8 large spinneysFOOD organic eggs
3 tbsp crème fraiche 
4 tbsp unsalted butter, melted 
spinneysFOOD salt and black pepper to taste
1 tbsp spinneysFOOD fresh chives, chopped

1 Peel, pit and dice the avocado. 2 In a large bowl, beat the eggs, crème fraiche, and three tablespoons of the butter together until light and frothy. 3 Melt the remaining tablespoon of butter in a large non-stick skillet over medium heat. 4 Pour the beaten egg mixture into the skillet, stirring slowly with a spatula. 5 As the egg mixture begins to set, reduce the heat a little and slowly but continuously lift and fold the eggs over themselves for about five minutes, until no liquid remains in the skillet but the cooked eggs remain moist and softly set. 6 Remove the skillet from the heat. 7 Season with salt and pepper. 8 Gently fold the diced avocado. 9 Sprinkle lightly with the chopped chives.
