If, like us, you're getting excited about your Thanksgiving (or Christmas) bird, now is as good a time as any to get the basics under your belt. Keep these four things in mind when defrosting turkey:
Plan ahead – a turkey weighing seven kilos, for example, can take two to three days to defrost.
Keep the bird in the packaging and on a large tray throughout the process – this will stop any juices leaking out onto other surfaces.
The quick way to defrost a turkey is breast-side down in a bath of cold water. Change the water every 30 minutes (one change per half a kilo).
Never defrost a turkey at room temperature as it will become a breeding ground for bacteria.
