Mum-of-two Fiona Archibald has put together a few kiddie favourites for the school week

Salmon, rice and edamame

A healthy and nutritious lunch to keep energy levels up


  • flaked salmon with boiled baby potatoes, cress and lemon-dill yogurt
  • flaked salmon with a granary roll, lettuce, mayo and gherkins
  • store-bought salmon California roll with cucumber, sesame seeds and soy sauce
  • salmon pasta salad with spring onions, lemon and crème fraîche

Pasta pots

This version uses shredded chicken, our very own Basilico sauce and sliced cucumber


  • broccoli, cherry tomato and ricotta pasta
  • roasted aubergine, caper, parsley and lemon pasta
  • baby spinach, mozzarella and roasted pepper pasta
  • green bean, pea, parmesan and basil pasta

Lunchbox pittas

There's something about being able to hold your own


  • boiled egg, chive and mustard mayo pittas
  • tuna, sweetcorn, lemon, yogurt and tahini pittas
  • pittas filled with olive oil-mashed cannellini beans
  • roasted pepper, rocket and black olive pittas

Chicken tikka dippers

Once cooked and cooled, they can be frozen in portions for extra ease and convenience

Lunchbox meatballs

A firm favourite with little ones, these meatballs (like the chicken dippers above) can be frozen – they take about an hour to thaw
