INGREDIENTS

½ cup spinneysFOOD Sugar
1 cup spinneysFOOD Water
1 whole yellow honeydew melon, chopped into large pieces
Juice of ½ lime
½ cup spinneysFOOD Fresh Basil Leaves

METHOD

    In a small saucepan, combine the water and sugar, and heat on a medium heat stirring until the sugar is dissolved. Set aside

    Blend the melon pieces, lime juice, basil leaves and sugar syrup until smooth. Place in a large airtight container and freeze

  • 3

    Break up the ice as the mixture freezes – every 30 minutes to an hour, use a fork to break up the ice crystals

  • 4

    Serve cold in a glass or a bowl – garnished with one basil leaf if you wish, and with a dessert spoon
