INGREDIENTS

12 Waitrose Meringue Nests
1 medium R2E2 mango, diced
⅓ cup coconut yoghurt
Pulp of 2 passion fruit
¼ cup spinneysFOOD Coconut Chunks

METHOD

    Arrange the meringues onto a platter for serving.

    Slice the coconut chunks into thin pieces. In a small pan, lightly toast the coconut chunks over a medium heat until light brown.

    Top each shell with a spoonful of coconut yoghurt followed by the diced mango, passion fruit pulp and toasted fresh coconut.

NOTES

R2E2 mangoes are a variety developed in Australia. They’re known for their sweet and mild flavour and firm flesh.
