Peel the mango and cut into cheeks.
Sprinkle each cheek with some brown sugar.
Heat a griddle pan on medium high and place the cheeks flat-side down on the pan. Cook for 1-2 minutes then turn each cheek over and cook for a further 1-2 minutes.
Serve with a scoop of vanilla ice-cream, a sprinkle of honey and finely chopped pecan nuts.
