INGREDIENTS

150g zucchini noodles
1 Kensington Pride mango, julienned
1 spinneysFOOD Organic Cucumber, julienned
1 avocado, cubed
Juice of ½ orange
Juice of 1 lime
1 tbsp spinneysFOOD Honey
1 small red chilli, finely chopped
2cm piece of spinneysFOOD Organic Ginger, grated
3 tbsp olive oil
1 tbsp sesame seeds, toasted
spinneysFOOD Salt and Pepper, to taste
Fresh basil, as needed

METHOD

    In a large mixing bowl, combine the zucchini, mango, cucumber and avocado.

    For the dressing, in a small jar or sealable container, combine the orange juice, lime juice, honey, chopped chilli, ginger, olive oil, sesame seeds, and season with salt and pepper. Shake well to combine.

    Toss the dressing over the salad, season to taste and serve garnished with fresh basil.
