INGREDIENTS

Splash of vegetable oil
1 pack spinneysFOOD Stir-fry Beef
Knob of butter
1 pack spinneysFOOD Exotic Mushroom, Asparagus, Garlic Stir-fry
75g mangetout, cut lengthways into 2-3 strips
75g net weight defrosted, podded edamame beans
spinneysFOOD Salt and pepper
Drizzle of sesame oil
2 tsp toasted sesame seeds
1 tbsp spinneysFOOD honey
1-2 tbsp soy sauce

METHOD

    Heat a wok or large frying pan with the vegetable oil.

    Once smoking, season the beef strips and quickly fry to golden brown before spooning on to a plate.

    Re-warm the pan, once hot add a knob of butter, add the exotic mushroom veg pack, mangetout and edamame beans; fry for 4-5 minutes, seasoning with salt and pepper.

    Mix the fried beef with the vegetables, sprinkle with sesame seeds before adding the honey and soy sauce.

    Serve the stir-fry drizzled lightly with sesame oil.

NOTES

TOP TIP: Noodles can be added to the stir-fry, blanching them in boiling water until tender before draining and adding to the beef and vegetables.
