INGREDIENTS

20ml olive oil
30g unsalted butter
4 spinneysFOOD Mixed Apples, peeled, cored and diced into 2cm pieces
2 medium red onions, diced
5cm piece of ginger, grated
5g mixed spice
10g spinneysFOOD Mustard Seeds
5g ground cloves
spinneysFOOD Salt and Black Pepper
55g brown sugar
100ml apple cider vinegar
10g chilli flakes
60g spinneysFOOD Raisins

METHOD

    In a medium sized saucepan, warm the olive oil and butter, next add the diced apples, onions, grated ginger, mixed spice, mustard seeds, cloves, salt and pepper to taste. Cook on a medium heat stirring occasionally for a few minutes until the onions and apples are slightly browned and caramelized.

    Add the brown sugar and cook for another minute on medium heat, stirring occasionally. Finally, add apple cider vinegar and chilli flakes; simmer until completely dry on low heat for about 10-15 minutes. Finish with raisins. The longer it ages, the more flavour the dish has.
