INGREDIENTS

4 spinneysFOOD Organic Free Range eggs
500ml milk
150g spinneysFOOD Cheddar Cheese, grated
50g butter, for greasing
4 garlic cloves, ground to a paste
3 spinneysFOOD Croissants, torn into chunks, even better if they are a few days old
8-10 spinneysFOOD White Button D+ Mushrooms, thinly sliced
5 baby leeks, thinly sliced
1 small red onion, finely diced
100g spinneysFOOD Cherry Tomatoes, halved
spinneysFOOD Salt, to taste
spinneysFOOD Fine Pepper, to taste

METHOD

    Preheat the oven to 200°C, gas mark 6.

    Combine the eggs, milk, Cheddar cheese, garlic paste and season generously.

  • 3

    Grease a baking dish with the butter and arrange the croissant chunks, mushrooms, leeks, onion and cherry tomatoes. Distribute the garlic paste on top.

    Pour over the egg mixture.

  • 5

    Place in the oven and bake until golden brown.

  • 6

    Serve warm.
