INGREDIENTS

4 spinneysFOOD Organic Free Range eggs
500ml spinneysFOOD Milk
150g spinneysFOOD Cheddar Cheese, grated
50g butter for greasing
4 cloves of garlic, ground to paste
3 spinneysFOOD Croissants, torn into chunks, even better if they are a few days old
8-10 white button mushrooms, thinly sliced
5 baby leeks, thinly sliced
1 small red onion, finely diced
100g cherry tomatoes, halved
spinneysFOOD Salt and Black Pepper

METHOD

    Preheat an oven to 200°C, gas mark 6.

  • 2

    Mix together eggs, milk, cheddar cheese, garlic paste and season generously.

  • 3

    Grease a baking dish with butter and arrange the croissant chunks, mushrooms, leeks, onion and cherry tomatoes. Distribute the garlic paste on top.

  • 4

    Pour over the egg mixture.

  • 5

    Place in the oven and bake until golden brown.

  • 6

    Serve warm.
