INGREDIENTS

4 fillets of seabream, skin off
100g breadcrumbs spinneysFOOD Country Bread Loaf
1 sprig spinneysFOOD Rosemary
50g grated parmesan
1 tbsp thyme
½ tsp garlic powder
Zest of 1 lemon
Fresh coriander
spinneysFOOD Salt and Black Pepper

METHOD

    Preheat an oven to 180°C, gas mark 4.

    In a food processor, blend together breadcrumbs, rosemary, Parmesan, thyme, garlic powder and lemon zest.

  • 3

    Season both sides of the fish fillet with salt and pepper.

  • 4

    Arrange on a baking tray and sprinkle generously with the breadcrumb topping.

  • 5

    Bake for 5-7 minutes or until the fish is cooked through.

  • 6

    Serve warm.
