Calamari Salad

When cooking calamari, the rule is to either cook it very quickly for just a few minutes or very very slowly. Serve this calamari salad with a hot mustard dressing like they do at Al Fanar

For the dressing

2g spinneysFOOD Chilli Powder
5g mustard paste
2g spinneysFOOD Salt
10ml fresh lime juice
15ml spinneysFOOD Organic Mediterranean Extra Virgin Olive Oil
15ml vinegar

For the salad

500g calamari rings
5g spinneysFOOD Salt
5g spinneysFOOD Fine Paprika
5g spinneysFOOD Chilli Powder
spinneysFOOD Pure Sunflower Oil, for sautéing
500g spinneysFOOD Cherry Tomatoes, sliced
250g white onions, finely julienned
250g yellow capsicums, cubed
25g spinneysFOOD Fresh Parsley, chopped
250ml dressing

    To make the dressing, mix all the ingredients together and shake thoroughly.

    To prepare the salad, marinate the calamari rings with the salt, paprika and red chilli powder. Sauté the calamari in a large saucepan over a high heat till just cooked. Cool immediately.

    Mix and toss all the remaining ingredients together in a bowl.

    Place the salad in a plate and top with the calamari rings.

    Drizzle generously with the dressing.
