INGREDIENTS

330g old-fashioned oats
100g whole almonds
50g coconut flakes
50g cashew nuts
60g salted butter or coconut oil
100g spinneysFOOD Medjool Dates, pitted
1 tsp spinneysFOOD Fine Cinnamon
½ tsp ground allspice
½ tsp spinneysFOOD Sea Salt, to taste
2 tbsp date syrup

To serve

Yoghurt
spinneysFOOD Blueberries

METHOD

    Preheat the oven to 180°C, gas mark 4. Line a large baking sheet with baking paper.

    Combine the oats, almonds, coconut and cashews in a bowl.

    In a small saucepan, melt the butter and add to a blender with the dates, spices, salt and date syrup. Stir through the oats mixture until well coated.

    Spread the granola out on a lined baking sheet, press it down well and bake in the preheated oven for 20 minutes. Allow to cool slightly then break into chunks. Store in an airtight container for up to 3 months.

    Serve with yoghurt and fresh fruit.
