Apple Pie Porridge with Ghee-Toasted Nuts

INGREDIENTS

250g peeled and cubed apples (about 3 medium apples)
1 tbsp spinneysFOOD Honey
1 tsp spinneysFOOD Fine Cinnamon
½ tsp spinneysFOOD Fine Ginger
A good pinch of freshly grated nutmeg
A pinch of spinneysFOOD Salt
70g porridge oats
300ml milk or milk alternative
50ml spinneysFOOD Bottled Drinking Water
40g sultanas

For the ghee-toasted nuts

4 tbsp ghee
100g mixed nuts
2 tbsp sunflower seeds
2 tbsp pumpkin seeds

METHOD

    Place the cubed apples, honey, cinnamon, ginger and the freshly grated nutmeg and salt in a pan over a low heat.

    Cover and leave to cook for about 4-5 minutes until the apple begins to soften (add a splash of water if it looks dry).

    Set aside ½ the apple mixture; lightly mash the rest in the pan using the back of a fork.

    Add the porridge oats, milk, water and sultanas to the apples, and cook gently until the oats are soft – approx. 7-8 minutes.

    Meanwhile, heat the ghee in a frying pan until bubbling. Add the nuts and seeds and toast for 2-3 minutes until golden. Remove from the heat immediately.

    Divide the apple-oat mixture between 2 bowls; top with the remaining stewed apples and drizzle with the ghee-toasted nuts.
