Strawberry sheet cake

This has to be one of the easiest dessert recipes on our site. Pick up a punnet of the plumpest, juiciest strawberries in store, use your pantry baking staples and prepare this treat in a flash

INGREDIENTS

180ml plain yoghurt
180ml spinneysFOOD Pure Sunflower Oil
340g spinneysFOOD Extra Fine Caster Sugar
290g spinneysFOOD Self-Raising Flour
250g ripe spinneysFOOD Strawberries, sliced lengthways
2 tbsp strawberry jam, for brushing
3 large eggs
Few drops almond extract

METHOD

    Preheat the oven to 180°C, gas mark 4.

    Grease and line a 30 x 20cm rectangular cake tin.

    In a large mixing bowl combine all the ingredients together, except the strawberries and mix well.

    Arrange the sliced strawberries on top of the cake.

  • 5

    Bake for 25-30 minutes, or until a skewer comes out clean and the cake is golden.

    Brush the top with the strawberry jam while still hot.
