Strawberry and camembert cheese toasties

Forget brie and cranberry - try this fruity, gooey mashup instead for a melt-in-your-mouth snack. Using sourdough above all other loaves just takes this sandwich to the next level, too

½ loaf sourdough, sliced thickly
50g salted butter, room temperature
3 tbsp strawberry jam (optional)
250g camembert cheese, sliced
6 large spinneysFOOD Strawberries, thinly sliced
1 bunch spinneysFOOD Fresh Basil, leaves finely sliced
2 tsp spinneysFOOD Organic Mediterranean Extra Virgin Olive Oil
Zest of 1 lemon
spinneysFOOD Sea Salt
spinneysFOOD Black Peppercorns, freshly ground

    Prepare the bread by buttering either side of each slice.

    On every other slice , spread a thin layer of strawberry jam and top with slices of camembert cheese. If the strawberries are very sweet you can leave out the jam.

    In a medium bowl, add the strawberries and basil leaves together then dress with the olive oil and lemon juice. Season well with the salt and pepper.

    Spoon the strawberries mix over the camembert cheese and top with one or two more slices of cheese.

    Place the other slices of bread over buttered side up.

    Place the sandwiches, buttered side down, on a non-stick frying pan over a medium-high heat and fry with the lid on for 3-4 minutes or until golden and crisp.

    Lower the heat and flip the sandwich on to the other side and fry for another 2-3 minutes.

    Serve immediately.
