Place the strawberries, maple syrup, salt and water in the jug of a blender and blitz until completely combined.
Over a serving jug, pour the mix through a strainer to get rid of any fibrous bits.
Add the chia seeds and whisk together and refrigerate for 1 hour.
When ready to serve, give it a quick whisk and add the lime juice.
Serve with whole strawberries and ice.
