Cut the tomatoes in half vertically then across so they are in quarters, and place them in a mixing bowl along with the beef tomatoes
Add the onion to the tomatoes
Drizzle with the olive oil, 1 tablespoon of the pomegranate molasses and sprinkle over the sea salt and black pepper. Stir and taste, adding more molasses or seasoning if necessary.
Leave to marinate for about half an hour at room temperature or longer in the fridge (1-2 hours).
Take out of the fridge at least 10 minutes before serving and sprinkle with the mint leaves.
