500g mix of spinneysFOOD Mixed Cherry Tomatoes, spinneysFOOD Roma Rama Vine Tomatoes, spinneysFOOD Roma Plum Tomatoes
2 beef tomatoes, sliced
½ small red onion, finely diced
2 tsp spinneysFOOD Organic Mediterranean
Extra Virgin Olive Oil
1-2 tbsp pomegranate molasses
spinneysFOOD Fine Sea Salt, to taste
spinneysFOOD Fine Black Pepper, to taste
5 leaves spinneysFOOD Fresh Mint, roughly chopped, for sprinking

    Cut the tomatoes in half vertically then across so they are in quarters, and place them in a mixing bowl along with the beef tomatoes

    Add the onion to the tomatoes

    Drizzle with the olive oil, 1 tablespoon of the pomegranate molasses and sprinkle over the sea salt and black pepper. Stir and taste, adding more molasses or seasoning if necessary.

    Leave to marinate for about half an hour at room temperature or longer in the fridge (1-2 hours).

    Take out of the fridge at least 10 minutes before serving and sprinkle with the mint leaves.
