INGREDIENTS

1½ cups spinneysFOOD Mediterranean Extra Virgin Olive Oil
½ tsp crushed red pepper flakes, or to taste
¼ tsp spinneysFOOD Whole Black Peppercorns
2 garlic cloves, minced
2 spinneysFOOD Bay Leaves
2 tbsp fresh oregano, finely chopped
2 tbsp spinneysFOOD Fresh Thyme, finely chopped
1 tsp fresh sage, finely chopped
225g block Greek feta cheese, or any other feta cheese

To serve

Assorted olives
spinneysFOOD Cherry Tomatoes
Ryvita, or crackers of choice

METHOD

    Add all the ingredients, except the cheese, into a medium-sized bowl. Mix well and let it stand for 15 minutes.

    Cut the feta into cubes and gently add it to the mixture.

  • 3

    Cover and refrigerate overnight. If that’s not an option, marinate for at least two hours.

  • 4

    Drain the oil and serve.

NOTES

TOP TIP

The olive oil used in this dish can be drained and used later as a salad dressing, drizzled over seafood or as a dip.
