Add all the ingredients, except the cheese, into a medium-sized bowl. Mix well and let it stand for 15 minutes.
Cut the feta into cubes and gently add it to the mixture.
Cover and refrigerate overnight. If that’s not an option, marinate for at least two hours.
Drain the oil and serve.
The olive oil used in this dish can be drained and used later as a salad dressing, drizzled over seafood or as a dip.
