INGREDIENTS

500g fresh prawns, heads removed and deveined
200g spinneysFOOD Cherry Tomato, halved
3 tbsp harissa paste
spinneysFOOD Mediterranean Extra Virgin Olive Oil, for frying
1 x 400g tin spinneysFOOD Cannellini Beans, drained and rinsed
spinneysFOOD Salt, to season
spinneysFOOD Whole Black Peppercorns, freshly ground, to taste
Handful of spinneysFOOD Fresh Parsley, leaves picked, to serve

METHOD

    Toss the prawns and tomatoes in the harissa paste

    Heat a pan with a little olive oil over a high heat and flash-fry the prawns for 2-3 minutes or until charred

    Add the drained cannellini beans and toss to coat

  • 4

    Season well with the salt and pepper and serve immediately with the fresh parsley
