Mushroom Biltong

Use a traditional biltong spice rub on meaty mushrooms and dry them in the oven to concentrate their umami flavour and make them chewy like biltong

500g large mushrooms, thickly sliced
210ml white vinegar
4 tbsp chutney
2 tbsp Worcestershire Sauce or HP Sauce
2 tbsp soya sauce
3 tbsp garlic powder
3 tbsp onion powder
2 tbsp crushed ginger
2 tsp spinneysFOOD Coriander Seeds
2 tbsp dried chilli flakes

    Place the mushrooms in a microwave-safe dish and heat on high power for 2-3 minutes or until cooked through. Drain any excess water

    Combine the rest of the ingredients together. Add the mushrooms and allow to marinate for at least 1 hour

    Drain the mushrooms from the marinade then arrange in a single layer on lined baking trays

    Preheat the oven to 110°C, gas mark ¼, and dry overnight. Store in an airtight container
