900ml quinoa rice milk
170g black quinoa, rinsed
3 tbsp date sugar, plus extra for serving
1/4 tsp spinneysFOOD Fine Cinnamon, plus extra for serving
3 tbsp ghee or butter
8 spinneysFOOD Khodri Dates with Almonds

To serve

Coconut yoghurt
4 tbsp spinneysFOOD shaved coconut, toasted
spinneysFOOD Edible Flowers, to decorate

    Bring the quinoa rice milk to a boil in a small saucepan

  • 2

    Add the black quinoa and return to a boil

  • 3

    Reduce to a low heat, and simmer, covered, until ¾ of the milk has been absorbed – about 15 minutes

    Stir in the date sugar and cinnamon. Cook, covered, until almost all the milk has been absorbed – approximately 30 minutes

    In the meantime, prepare the dates. Heat the ghee in a non-stick frying pan over a medium heat. When hot, add the dates and stir them around for 30 seconds. The skin should be blistered and the middle of the dates should be warm

    Remove the dates from the ghee and spoon immediately on top of the quinoa

    Serve with the coconut yoghurt and sprinkle with the toasted coconut flakes and edible flowers
