INGREDIENTS

1 packet (225g) Jasberry Superfood Rice Penne with Goji Berry and Turmeric
2 tsp spinneysFOOD Salt

For the roasted red onions

spinneysFOOD Salt, to taste
spinneysFOOD Fine Black Pepper, to taste
1 tbsp spinneysFOOD Organic Mediterranean Extra Virgin Olive Oil
1 tsp spinneysFOOD Cumin Seeds, ground
1 tsp spinneysFOOD Coriander Seeds, ground
5 red onions, quartered

For the shredded chicken

800ml coconut milk
4 chicken breasts, skinless
2 tsp spinneysFOOD Natural Sea Salt Flakes
1 tsp spinneysFOOD Whole Black Peppercorns, freshly ground

For the sauce

50g spinneysFOOD Fresh Coriander
2 spinneysFOOD Red Chillies, seeded and chopped
1 thumb-sized piece of ginger, grated
1 tsp spinneysFOOD Honey
400ml coconut milk
Zest and juice of 1 lime

To serve

100g spinneysFOOD Rocket leaves
spinneysFOOD Fresh Coriander
Pumpkin seeds, toasted
spinneysFOOD White Sesame Seeds, toasted

METHOD

    Preheat the oven to 200°C, gas mark 6

  • 2

    Prepare the pasta by bringing a large pot of water to a boil. Once boiling, season with salt, add the pasta and cook for 10-15 minutes. Strain and set aside

    To prepare the roasted red onions, combine the salt and pepper, olive oil, cumin and coriander in a medium bowl

  • 4

    Toss the red onions through the seasoning and bake for 15-20 minutes, or until the onions are browned and crispy

    For the shredded chicken, combine all the ingredients in a medium to large pot, cover with a lid and simmer for 20-25 minutes, or until the chicken is tender and cooked through

    Shred the chicken while it’s still hot

  • 7

    To make the sauce, place all the ingredients in a blender and blitz until smooth. Season to taste

    Combine the pasta, red onions and shredded chicken and spoon over enough of the sauce to coat it well

  • 9

    Serve the pasta with the fresh rocket and coriander leaves, sprinkled with toasted pumpkin and sesame seeds, and with extra sauce on the side
