INGREDIENTS

1.3kg ripe Pure Harvest Candy Tomatoes
250ml spinneysFOOD Honey
300g spinneysFOOD Extra Fine White Sugar
Juice of 1 lemon
1 vanilla pod, split and seeds scraped

METHOD

    Place the candy tomatoes, honey, sugar, lemon juice and vanilla pod and seeds in a large pot over a low heat and bring to a simmer. Continue to simmer for 1 hour, or until thick and sticky.

    Serve as part of a cheese board with goat’s cheese or mature Cheddar, or serve with vanilla ice cream or panna cotta.
