Avocado Pizza

This scrumptious pizza at Brambles is proof that not all pizzas need cheese to make them whole. Creamy avo is the perfect base while fresh parsley and zingy jalapenos up the flavour profile

For the avocado topping

6 Haas avocados, large and ripe
6 tbsp lime juice
spinneysFOOD Salt, to taste
spinneysFOOD Fine Black Pepper, to taste
6 tsp black sesame seeds
6 tsp spinneysFOOD White Sesame Seeds
6 tsp flax seeds
6 tsp sunflower seeds
6 tsp pumpkin seeds
4 small tomatoes, cubed
5 radishes, cut into matchsticks
6 tbsp pink pickled onions
6 tbsp jalapeños, thinly sliced
1 cup spinneysFOOD Fresh Coriander, picked
spinneysFOOD Coarse Seasalt Crystals, to taste

For the pizza dough

8g yeast
650ml spinneysFOOD Bottled Drinking Water
1kg spinneysFOOD All-Purpose Flour
25g spinneysFOOD Salt
25g spinneysFOOD Mediterranean Extra Virgin Olive Oil, plus extra for brushing
4 tbsp garlic, finely chopped, for brushing the pizza bases

    To prepare the pizza dough, mix the yeast with water and set aside to bloom.

    In a large mixing bowl, add the flour and salt and mix well. Add the yeast mixture slowly and start to mix by hand. Add the olive oil. Mix gently and set aside for 1 hour.

    After an hour, generously sprinkle flour over a clean work surface. Place the dough on the floured surface and start kneading until smooth (approximately 15-20 minutes).

    Place the dough in a bowl and cover with a clean cloth and allow to proof for 24 hours.

    To prepare the pizzas, make the avocado topping by mashing the avocados with the lime juice in a bowl and season with the salt and pepper. Store in the fridge.

    For the ‘Good Seeds’ mix, add the black and white sesame seeds, flax seeds, sunflower and pumpkin seeds to a bowl and set aside.

    Remove the dough from the bowl and cut it into 6 even pieces and roll into balls. Set up a work surface by flouring it and flatten the dough balls by hand, working from the centre to the outer edges.

    Brush with the olive oil, minced garlic and bake at 220°C, gas mark 7, for 15 minutes.

    To assemble the pizzas, top the bases with the mashed avocado, then sprinkle with the tomatoes, radishes, pickled onions, jalapenos and good seeds mix. Finish with a healthy sprinkling of coriander and some coarse sea salt. Serve immediately.
