Paloma 'Dove' Slushies

This refreshing dessert is based on the classic paloma cocktail - paloma means 'dove' in Spanish. The recipe is easy to scale up and the freezing for the slushie can be done in advance

For the frozen juice mixes

70g spinneysFOOD Extra Fine Caster Sugar
500ml spinneysFOOD Bottled Drinking Water
Juice of 2 limes
1 vanilla pod, seeded
250ml grapefruit juice
250ml pomegranate juice

To serve

1L kombucha

    Place the sugar, water, lime juice and vanilla in a small pot over medium heat.

    Stir until all the sugar has dissolved.

    Take off the heat and divide into two separate bowls.

    Stir grapefruit juice into one and pomegranate juice into the other.

    Pour into two containers and freeze overnight.

    Take out the frozen juice mixes and scrape each of them into slushies using a fork.

    Fill the glasses with layers of pomegranate ice, grapefruit ice and top with kombucha.
