INGREDIENTS

225g cake flour, sifted
35g corn flour, sifted
1 tsp baking powder, sifted
1 tsp spinneysFOOD Natural Sea Salt Flakes
375ml buttermilk
4 tbsp vegetable oil
2 large eggs, separated
75g spinneysFOOD Baby Spinach leaves, shredded
125g halloumi, grated
2 tsp chives, finely chopped
2 tsp spinneysFOOD Mediterranean Extra Virgin Olive Oil
50g Parmesan cheese, grated
2 large eggs, extra, for serving
spinneysFOOD Salt, to season
spinneysFOOD Whole Black Peppercorns, freshly ground, to season

To serve

100g spinneysFOOD Cherry Tomatoes, quartered

METHOD

    Place the flours, baking powder and sea salt flakes in a large bowl and mix to combine.

    Add the buttermilk, oil and egg yolks, whisk until smooth and set aside.

  • 3

    Place the egg whites in a medium bowl and whisk until stiff peaks form.

  • 4

    Add the egg white to the flour mixture and gently fold to combine.

  • 5

    Add the spinach, halloumi and chives to the waffle batter and fold to combine.

  • 6

    Preheat a lightly greased waffle maker according to the manufacturer’s instructions.

    Cook 250ml of the batter for 6-7 minutes or until golden brown and crisp.

    Repeat with the remaining batter to make 4 waffles. Set aside and keep warm.

    Heat the oil in a large non-stick frying pan over a high heat.

  • 10

    Sprinkle the Parmesan over the base of the pan and allow to melt, then crack the eggs on top and cook for 1-2 minutes or until just cooked.

    Divide the waffles between serving plates and top each with an egg. Serve with the cherry tomatoes.
