3 tbsp olive oil
2 large onions, finely chopped
2 garlic cloves, crushed
3 tbsp spinneysFOOD Fine Cumin
3 tbsp spinneysFOOD Fine Coriander
2 x 400g spinneysFOOD Chick Peas In Water, drained and rinsed
60g spinneysFOOD Khodri Dates, seedless
2 x 400g spinneysFOOD Chopped Italian Tomatoes
750ml vegetable stock
spinneysFOOD Salt, to taste
spinneysFOOD Whole Black Pepper, freshly ground, to taste
Couscous, to serve

    Heat the olive oil in a large saucepan and fry the onions for 8 minutes until tender.

    Add the spices and cook for a few seconds then add the chickpeas, dates, tomatoes and stock. Simmer for 30 minutes.

    Season to taste.

    Serve with couscous on the side.
