Heat up a large cast iron pot or deep fat fryer to 180°C.
Make the pakora batter by combining all the ingredients together in a large bowl.
If you don’t have a thermometer, test that your oil is ready by dropping a tsp of the batter in. If it browns and rises immediately then it’s ready.
Drop spoonfuls of the batter into the oil, making sure to not overcrowd the pot.
Fry for about 3 minutes a side or until golden and cooked through. Once golden on once side, flip the pakoras using tongs or a slotted spoon.
Drain on paper towels and serve hot.
