INGREDIENTS

2 large potatoes, peeled and finely grated
2 leeks, peeled and finely sliced
1 large egg
1½ cup chickpea flour, sieved
½ cup spinneysFOOD Fresh Coriander, chopped
½ tsp baking powder
1 tsp spinneysFOOD Fine Turmeric
1 tsp spinneysFOOD Honey
2 tsp spinneysFOOD Curry Powder
2 tsp spinneysFOOD Salt
2 green chillies, chopped
4 boiled eggs, cut into pieces
spinneysFOOD Sunflower Oil, for frying

METHOD

    Heat up a large cast iron pot or deep fat fryer to 180°C.

    Make the pakora batter by combining all the ingredients together in a large bowl.

    If you don’t have a thermometer, test that your oil is ready by dropping a tsp of the batter in. If it browns and rises immediately then it’s ready.

    Drop spoonfuls of the batter into the oil, making sure to not overcrowd the pot.

    Fry for about 3 minutes a side or until golden and cooked through. Once golden on once side, flip the pakoras using tongs or a slotted spoon.

    Drain on paper towels and serve hot.
