Spicy Jackfruit Wraps

This versatile tropical fruit can be used in a variety of dishes, both savoury and sweet. Try these wraps for a filling and satisfying meal

2 tbsp extra-virgin olive oil
2 baby leeks, rinsed and sliced
1 clove of garlic, crushed
2 tbsp spinneysFOOD Fine Cumin
2 tbsp spinneysFOOD Fine Paprika
230g jackfruit
1 x 400g tin spinneysFOOD Chopped Tomatoes
50g dark muscovado sugar
3 tbsp chilli sauce, to taste
2 tbsp apple cider vinegar
250ml vegetable stock
1 tbsp chilli sauce
spinneysFOOD Sea Salt
spinneysFOOD Whole Black Peppercorns, freshly ground, to taste
6 spinneysFOOD Organic Flour Tortilla Wraps

To serve

1 ripe avocado, pitted and sliced
1 red onion, peeled and thinly sliced
spinneysFOOD Fresh coriander, to garnish

    Heat a medium-sized pot over a medium heat and sauté the leeks and garlic in olive oil for 5 minutes. Add the spices to the pan and stir for a further 5 minutes.

    Add the jackfruit, along with the rest of the ingredients, and lower the heat. Allow to simmer and reduce for 35-40 minutes. Season with salt and pepper.

    Spoon the spicy jackfruit into the centre of each wrap and top with avocado, red onion and coriander. Tuck the ends of the wrap over the filling then roll the wrap up from one side. Serve immediately.
