Heat a medium-sized pot over a medium heat and sauté the leeks and garlic in olive oil for 5 minutes. Add the spices to the pan and stir for a further 5 minutes.
Add the jackfruit, along with the rest of the ingredients, and lower the heat. Allow to simmer and reduce for 35-40 minutes. Season with salt and pepper.
Spoon the spicy jackfruit into the centre of each wrap and top with avocado, red onion and coriander. Tuck the ends of the wrap over the filling then roll the wrap up from one side. Serve immediately.
