INGREDIENTS

4 cos lettuce hearts, halved
100g (10-12) Brussels sprouts, halved
250g kale, stems removed
1 large red cabbage, quartered
2 lemons, sliced
3 tbsp olive oil
spinneysFOOD Sea Salt, to taste

Tahini dressing

1 small garlic clove, peeled and grated
125ml vegetable oil
4 tbsp tahini (sesame paste)
3 tbsp white grape vinegar
2 tbsp spinneysFOOD Organic Maple Syrup (or spinneysFOOD Honey)
3/4 tsp spinneysFOOD Salt
Squeeze of lemon

To serve

Sesame seeds, toasted
Pickled red onion, finely sliced

METHOD

    For the tahini dressing, whisk all the ingredients together until completely combined.

    Brush the lettuce, Brussels sprouts, kale, red cabbage and lemon slices with olive oil.

    Place on a BBQ grill over medium-hot coals and chargrill until just tender. Season well. Arrange all the grilled vegetables on a plate and drizzle with the tahini dressing. Serve immediately.
