For the wasabi mayo
To make the wasabi mayo, combine the mayo and wasabi paste in a small bowl. Set aside.
For the salmon, make the basting sauce by whisking the honey, soy sauce and lemon juice together. Prepare a BBQ with charcoal or wood and allow the fire to burn out until you have medium-hot coals.
Generously baste the salmon with the sauce on both sides then place them on the grill. Cook for 2 minutes on either side (for medium rare).
Serve the salmon fillets on a wholewheat bun with the wasabi mayo, pickled ginger, coriander and sprouts.
