INGREDIENTS

1 whole ripe pineapple, peeled
4 tbsp boiling water
4 tbsp soft brown sugar
50g salted butter, melted, for brushing
Pinch of ground star anise

Coconut drizzle

4 tbsp coconut cream
2 tbsp spinneysFOOD Honey, to sweeten

To serve

spinneysFOOD Mango Sorbet, coconut shavings
spinneysFOOD Fresh Mint and spinneysFOOD Edible Flowers

METHOD

    Peel the pineapple using a sharp knife, but leaving the leaves and crown intact

    In a separate bowl, combine the boiling water, sugar, butter and star anise. Place the whole pineapple on the BBQ grill over medium-low coals

  • 3

    Brush with the butter, turning every 2-3 minutes until the pineapple is soft and golden

  • 4

    In the meantime, prepare the drizzle by stirring the coconut cream and honey together

  • 5

    Serve the pineapple, sliced, with the coconut drizzle, mango sorbet and coconut shavings
