Soak 12 wooden skewers in water for at least 15 minutes.
Thread the halloumi, peppers, onion and courgettes onto the skewers.
Combine the garlic, olive oil, parsley and vinegar and mix well.
Brush the skewers with the marinade then place over medium-hot coals, turning every 2-3 minutes, or until cooked – about 5-8 minutes in total.
Serve with extra marinade drizzled over.
