INGREDIENTS

10 red spring onions, finely sliced
2 limes, zested and juiced
½ mild chilli, seeded and finely chopped
2 tbsp olive oil
20g spinneysFOOD Fresh Parsley, chopped
spinneysFOOD Sea Salt
Cracked spinneysFOOD Whole Black Pepper, to taste
450g mixed mushrooms, finely sliced
spinneysFOOD Micro Greens, to serve

METHOD

    In a large bowl, combine the onions, lime juice and zest, chilli, oil and parsley. Season well.

    When ready to serve, toss the mushrooms in the vinaigrette and top with the micro greens.
