INGREDIENTS

For the Crêpe Batter

250ml spinneysFOOD Full Fat Milk
120g spinneysFOOD All-Purpose Flour
A pinch of spinneysFOOD Sea Salt
4 spinneysFOOD Organic Free Range Eggs
25g spinneysFOOD Caster Sugar
3 tbsp unsalted butter, melted
Melted unsalted butter, for cooking

Accompaniments

Figs
Ricotta cheese
spinneysFOOD Honey
Bananas
Pecan nuts, roasted/ caramelised
Assorted jams
spinneysFOOD Pears
spinneysFOOD Strawberries
Nutella

METHOD

    In a blender, combine all the ingredients, except the butter for cooking. Mix until foamy on the surface

  • 2

    Let it rest for at least 15 minutes before cooking

  • 3

    In the meantime, prepare all the accompaniments and arrange them on a platter

  • 4

    Wipe the base of a medium, non-stick frying pan with the butter and put on a low heat

  • 5

    Using a 1/3 cup measure, pour the batter into the centre of the pan. Cook until the underside is a light golden brown, about 1 minute

  • 6

    Loosen the edges with a spatula and using your fingers, carefully flip the crêpe and cook for another minute

  • 7

    Remove from the pan and repeat with the remaining batter, wiping the pan with butter as needed

  • 8

    Serve with the accompaniments
