Winnie the Pooh’s Honey Cake

Bears love honey and Winnie the Pooh was no exception. We’ve taken his favourite food and turned it into a drool-worthy cake

INGREDIENTS

For the honey cake

420g spinneysFOOD Self-Raising Flour
330g soft brown sugar
100g ground almonds, lightly toasted
340g spinneysFOOD Honey
310g salted butter, melted
6 large eggs, room temperature
360ml buttermilk

For the honey buttercream

250g salted butter, softened
480g spinneysFOOD Super Fine Icing Sugar, sifted
30g spinneysFOOD Honey

To Serve

200g honeycomb

METHOD

    Preheat the oven to 180°C (160°C fan-assisted), gas mark 4. Grease and line a 40cm x 35cm baking tray

  • 2

    In a medium-sized bowl, combine the flour and sugar

  • 3

    In a separate bowl, whisk together the rest of the ingredients and add to the flour mixture. Stir until smooth and just combined

    Pour the batter into the prepared baking tray and bake for 30-40 minutes or until a skewer inserted into the middle of the cake comes out clean

    Allow the cake to cool for 15 minutes in the tray before inverting it onto a rack to cool completely

    To make the buttercream, place the butter in the bowl of a stand mixer fitted with a paddle attachment, beat for 8 minutes or until smooth and creamy. Add the icing sugar and the honey and continue to beat for another 20 minutes, until light and fluffy

    To assemble the cake, trim the edges off the cooled cake and divide into three equal rectangles

    Spread a quarter of the buttercream over the bottom layer of the cake and sprinkle some crushed honeycomb over it

  • 9

    Top with the second cake layer and repeat the process

  • 10

    Add the final cake layer to the stack and spread the remaining buttercream on top of it. Top with large chunks of honeycomb
