INGREDIENTS
For the chocolate base
2 tbsp cocoa powder, sifted
1 tbsp brown sugar
250ml milk
100g good-quality dark chocolate, roughly chopped
65g malted milk powder
1 generous pinch of spinneysFOOD Sea Salt
For the milkshake
500ml spinneysFOOD Madagascan Vanilla Ice Cream
1 pinch of spinneysFOOD Sea Salt

Freeze the glasses you’re going to serve the milkshakes in

To make the chocolate base, whisk the cocoa powder, sugar and 45ml of the milk in a small saucepan over a medium heat, until thick and glossy. Whisk in the rest of the milk, the chopped chocolate, malted milk powder and salt. Heat until just below boiling point. Take off the heat and allow to cool

In the jug of a blender, combine two-thirds of the cooled chocolate base with the ice cream and salt. Blend until completely smooth

Divide the remaining chocolate base between 4 glasses and top with the milkshake
