INGREDIENTS

120g cake flour
1 tsp baking powder
1 pinch salt
2 large eggs, separated
75g granulated sugar
60ml water
1 tbsp salted butter, melted
1 tsp vanilla extract
2 large apples, peeled and cored
Vegetable oil, for frying

TO SERVE

1 tbsp spinneysFOOD Fine Cinnamon
120g spinneysFOOD Super Fine Icing Sugar, sifted
Salted caramel sauce

METHOD

    To make the batter, whisk the flour, baking powder and salt in a large bowl

    In a separate bowl, combine the egg yolks, sugar, water, melted butter and vanilla and whisk to combine

  • 3

    Fold the dry ingredients into the egg mixture until just combined

  • 4

    In the bowl of a mixer fitted with a whisk attachment, beat the egg whites until soft peaks form, then fold them into the batter

    Slice the apples into thick discs – you should get around 6 slices from each apple

  • 6

    Heat a large pot of oil (or a deep fat fryer) to 180ºC

  • 7

    Dip the apple discs into the batter, then drop them into the hot oil to fry until golden. This might take 5-10 minutes. Drain on a paper towel

  • 8

    Combine the cinnamon and icing sugar together. Serve the apple doughnut with a generous dusting of icing sugar and salted caramel sauce
