INGREDIENTS

4 tbsp olive oil
125ml spinneysFOOD Balsamic Vinegar of Modena
125ml spinneysFOOD Balsamic Vinegar of Modena
2 cloves garlic, finely grated
600g spinneysFOOD Roma Rama Vine Tomatoes
5g spinneysFOOD Fresh Basil, torn
spinneysFOOD Salt, to taste
Cracked spinneysFOOD Black Peppercorns, to taste
350g spinneysFOOD Spiralised Courgette

To serve

50g parmesan, shaved
5g spinneysFOOD Fresh Basil

METHOD

    To make the dressing, put the olive oil, balsamic, garlic, tomatoes and basil leaves together in a bowl and toss to combine. Season with salt and pepper. Refrigerate for 15 minutes before serving

    When ready to serve, add the spiralised courgette to the dressing and serve with parmesan shavings and extra basil leaves
