Cucumber and Apple Shaved Ice

3 spinneysFOOD Cucumbers, roughly chopped
115g spinneysFOOD Exta Fine Caster Sugar
250ml cloudy apple juice
4 tbsp fresh lime juice
1 pinch spinneysFOOD Salt

    Place the cucumbers in a food processor or blender and blitz until completely smooth

    In a small pot, combine the sugar and the apple juice. Stir to dissolve the sugar and bring to a boil. Remove from the heat and allow to cool before stirring in the cucumber juice, lime juice and salt

    Pour the mixture into a 20cm x 30cm shallow metal tin

  • 4

    Freeze the mixture until the edges start to set – for about 30 minutes. Then, scrape the mixture using a fork to break up any frozen parts

    Continue to freeze, breaking up the mixture every 30 minutes, until it resembles shaved ice
