Matcha-Mint Chocolate-Chip Lollies

1x 400ml tin coconut cream
10g spinneysFOOD Fresh Mint
1 small avocado, skin removed and pitted
2 tsp matcha powder
80ml spinneysFOOD Maple Syrup or spinneysFOOD Honey
1 tsp peppermint extract
1 pinch spinneysFOOD Salt
100g 70% dark chocolate, roughly chopped
6 wooden lolly sticks

    Place all the ingredients except for the chopped dark chocolate into the jug of a blender and pulse until completely smooth and creamy

    Pour the mixture through a sieve to get rid of any unprocessed mint leaves

    Stir in the chopped chocolate pieces and divide the mixture between 6 (80ml capacity) ice lolly moulds. 4 Insert the wooden lolly sticks and freeze for 3 hours, or until solid
