INGREDIENTS

For the tart cases

150g granola
3 tbsp coconut oil, melted

For the yoghurt filling

150g double-thick yoghurt
1 tbsp spinneysFOOD Honey
1 vanilla pod, deseeded

To serve

2 bananas, sliced
4 passion fruits, pulp removed

METHOD

    To make the tart cases, place the granola in a food processor and blend to a fine texture

    In a medium mixing bowl, add the granola and coconut oil and combine

  • 3

    Spoon 2-3 tbsp into 6 small tart cases and refrigerate for 1 hour or until set and the cases pop out of their moulds

    In a small bowl, combine the yoghurt, honey and vanilla seeds. Spoon enough filling into the tart cases to fill three-quarters of the way up

  • 5

    Serve with sliced banana and passion fruit pulp
