Chimichurri Steak

INGREDIENTS

2 tbsp spinneysFOOD Sunflower Oil
600g spinneysFOOD Organic Irish Dry-Aged Ribeye
spinneysFOOD Salt
spinneysFOOD Black Pepper

For the chimichurri sauce

30g spinneysFOOD Fresh Parsley, finely chopped
30g spinneysFOOD Fresh Coriander, finely chopped
1 spinneysFOOD Red Organic Chili, finely chopped
1 large clove garlic, crushed
2 shallots, finely chopped
2 tsp dried oregano
2 tsp dried oregano
½ tsp spinneysFOOD Sea Salt
2 tbsp red grape vinegar
5 tbsp olive oil
1 tbsp cold water

To serve

500g spinneysFOOD Sweet Potato Chips

METHOD

    Heat a heavy, non-stick pan over a medium-high heat with a drizzle of sunflower oil

    Once hot, add the steaks to the pan and cook for 2-3 minutes on each side or until cooked to your liking. Transfer the steaks to a plate and allow them to rest for around 10 minutes

    To make the chimichurri sauce, add all the ingredients to a food processor and blitz until smooth. Season with salt and pepper

  • 4

    Serve the steaks with the sauce and sweet potato chips to the side
