Hot Double Cheese Quesadillas

150g roasted red peppers from a jar, chopped
4 spinneysFOOD Bunched Spring Onions, sliced
1 tbsp hot sauce, such as tabasco
50g tbsp jalapeños, chopped
120g spinneysFOOD Grated Mozzarella
120g red Cheddar, grated
6 spinneysFOOD Organic Flour Tortilla Wraps
1 tbsp spinneysFOOD Sunflower Oil

    Preheat the oven to 160°C, gas mark

    Add the peppers, spring onions, hot sauce, jalapeños and both cheeses to a large mixing bowl, and combine

    Add 1/6 of the cheese filling to one half of a tortilla wrap. Fold the tortilla wrap in half so you are left with a crescent-shaped sandwich. Repeat this process with the remaining tortilla wraps

    Heat a large pan over a medium heat with a drizzle of sunflower oil. Once hot, add a tortilla sandwich to the pan and fry for 1-2 minutes on each side or until brown and crispy

    Transfer the quesadilla to a lined baking tray and place it in the oven to keep warm. Repeat this process with the remaining tortilla sandwiches

    Slice each quesadilla into triangles and serve while hot
