12 ClemenGolds
520g granulated sugar
2 whole star anise
2 spinneysFOOD Cardamom Pods, crushed slightly
250ml tonic water
2 tsp pectin
60ml lemon juice

To serve

Ciabatta bread

    Prepare the ClemenGolds by removing the peel and slicing the fruit into shreds that are about 1mm thick

    Add all the ingredients, including the ClemenGold peel and flesh, to a large pot. Place over a medium heat and stir to combine

    Bring the mixture to a boil and leave for 30-40 minutes, or until thickened and syrupy

    Roughly chop the fleshPour into sterilised jars and keep in a cool, dry place

    Once opened, refrigerate the marmalade for up to 2 months
