INGREDIENTS

60ml kiwi purée
20ml cox apple shrub (see below)
60ml apple juice
20ml yuzu and ginger cordial
5g lemongrass
1 pinch Himalayan pink salt
3g black and white sesame seeds, roasted

To serve

Ice cubes

METHOD

    Add all the ingredients to a shaker and stir using a bar spoon

  • 2

    Pour the mixture over crushed ice in a glass of your choice

  • 3

    Garnish with fresh mint leaves and serve

NOTES

Make your own apple shrub

1 Grate 10 green apples 

2 Add these to a mixing bowl with ½ cup sugar and stir to combine 

3 Cover the bowl tightly with plastic wrap and refrigerate for at least 24 hours 

4 Remove from the fridge and add 100ml vinegar 

5 Strain the mixture though a fine mesh strainer or a cheesecloth
