INGREDIENTS

30ml home-made dragon fruit reduction
100ml soursop juice
100ml banana purée
10ml condensed milk
10ml lime juice
1g nutmeg
1 scoop of crushed ice (approximately 1 teacup)

To serve

Dragon fruit and lavender flowers
Crushed ice

METHOD

    In a blender, combine all the ingredients together with the crushed ice and blitz

  • 2

    Fill a glass with crushed ice, to about two-thirds of the way up

  • 3

    Pour the mixture into the glass, garnish with slices of dragon fruit and lavender flowers, and serve immediately

NOTES

Make your own dragon fruit reduction

1 Peel three dragon fruits and cut them into cubes or balls using a melon baller

2 In a deep pot, add the fruit to 100g of sugar and 500ml water

3 Bring the mixture to a boil and cook until the liquid has reduced by half

4 Chill before use
